Why invest in a better diet?
On my family's farm near Chicago, farm-to-table was a lifestyle for our family of 7.
It was labor. Baking and cooking from scratch was all we knew. Home cooked food is delicious,
but there was a problem: heart disease, hypertension & obesity were the norm. By my early 20's I had a
great career as a scientist. I worked long hours. I ate out often. I weighed nearly 300 pounds.
I was depressed ....and then my father unexpectedly died at the age of 51. Something had to change: Me!
Learning to cook without relying on excess fat and salt required years of training and skill.
I had to re-learn everything. I discovered that fresh, high quality food tastes better. I FELT better! I
found ways to flavor that made even low sodium taste great. It made losing the 130 pounds & keeping it
off for 20 years possible (and enjoyable). I've never lost my love for food or curiosity for new ideas and
challenges. Mastering balance in nutrition and a healthy lifestyle demands a major time commitment,
